About the Recipe

The piquancy of Thai chilies, the aromatic allure of lemongrass, and the subtle sweetness of palm sugar come together in a dressing that is simply divine. The Ingredients

Thai Lemongrass Dressing

• 2 tablespoons ginger coarsely chopped

• 6 Cloves garlic

• 3 tablespoons fresh lime juice

• 4 to 6 Thai chilies

• 4 tablespoons lemongrass, tops removed, ends crushed

• 4 tablespoons patis (fish sauce)

• 3 tablespoons palm sugar or brown sugar.


Shrimp Salad

• 1 pound Shrimp, peeled, deveined and steamed or boiled til just cooked or pink.

• 3 English or Persian cucumbers sliced

• 1 cup Cilantro Leaves

• 1/2 cup thinly sliced Shallots

• 1/2 cup very thinly sliced Lemongrass

• 1/2 cup small Fresh Mint Leaves

• 1/2 cup Thai Basil

The Method

Thai Lemongrass Dressing

Option 1:


Combine all ingredients and let sit for at least 10 minutes before using


Option 2:


Can combine all ingredients in a blender and blend to desired consistency and use the dressing this way as well.


Shrimp Salad

Step 1


Combine all ingredients for the dressing. Set aside. (See instructions above)


Step 2


Bring a large pot of salted water to a simmer. Add shrimp and simmer just until opaque, 2 to 3 minutes.


Step 3


Drain shrimp well.


Step 4


Toss warm shrimp with desired amount of  dressing. Add cucumber, cilantro leaves, shallots, lemongrass and mint and fold everything together until evenly combined.
