• 1 tablespoon olive oil (extra virgin)
• (2) 6 oz red snapper fillets
• 1/4 teaspoon each, salt & pepper (to taste)
• 1/4 teaspoon garlic powder
• 1 tablespoon lemon juice
• 1/2 teaspoon of minced garlic
• 2 tablespoon butter (cut into 1 tablespoon pats)
• family favorite grits (prepared by your families secret recipe)
In a large skillet, add the extra virgin olive oil and place it over medium-high heat. Pat your red snapper fillets dry with a paper towel and season the fillets with garlic powder, salt and pepper.
Place the fillets into the hot skillet with the skin side down. Sear for 4 to 5 minutes before carefully flipping the fish over and cooking for an additional 2-3 minutes. Remove the cooked fish and set to the side.
In the same skillet, add the minced garlic, lemon juice and butter. Whisk until the butter is fully melted and the garlic is fragrant.
Drizzle the snapper with the garlic butter sauce and serve over your families favorite cheddar grits recipe. Serve immediately.
