• 1 pound cod filets cut into strips
• 1 cup potato starch
• 1/2 teaspoon MSG
• 1/2 teaspoon onion powder
• 1/2 teaspoon garlic powder
• 1/2 teaspoon smoked paprika
• 1/4 teaspoon sea salt
• 1/2 teaspoon ground white pepper
• 1/4 teaspoon cayenne
• 1/4 cup thai chili sauce
• 1 whole lime wedged
Pat fish dry. Mix all dry ingredients in a medium bowl. Heat deep fryer to 340°F.
Coat fish thoroughly in dry mixture, squeezing the mixture into the fish. Let sit for 10 minutes.
Fry fish for 2-3 minutes or until lightly golden. Remove and let oil drain off for 3-5 minutes.
Increase fryer temperature to 370°F. Fry fish an additional 1 minute or to a medium to dark golden color. Remove and let oil drain
